I saw a version of this soba noodle salad while scrolling through Instagram. A delicious and fresh combination with a bit of everything that I love to eat. Soba noodles, red cabbage, coriander and peanut sauce. I like to eat lots of different vegan side dishes and make a meal this way. This soba noodle salad is going to the top of the list. This can be prepared in advance and takes a total of 15 minutes to make from beginning to end. Easy.

Soba Noodle Salad
Serves 4 or 6 as a side dish
Ingredients
1 packet of soba noodles (90g)
1 red capsicum
1 yellow capsicum
1 cucumber
1 carrot
1/4 red cabbage
1/4 cup peanuts
1/4 cup coriander
1 tablespoon sesame seeds
peanut sauce
2 tablespoons smooth peanut butter
1 tablespoon maple syrup
1 tablespoon soy sauce
1 tablespoon lime juice
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
3 tablespoons water (more or less depending on how thick / thin you like your sauce)
optional: fresh red chilli
What do I do now?
Cook the noodles as per the packet instructions. Rinse and drain.
Cut all of your vegetables into thin strips.
Put the noodles and vegetables on the plate. Top with coriander, peanuts and sesame seeds.
To make the peanut sauce, place everything into a small pot on low heat and stir to combine for about 5 minutes.

Great side or main dish. You could easily make this in advance for a very quick and easy dinner.
