Vegan gingerbread cookies for a lovely festive treat this Christmas. Very simple to make. They make the kitchen smell so good. These will last about 3-4 days in an airtight container. You can use whatever shapes you have – star, gingerbread man cutter, circles etc

Gingerbread Cookies
Makes 24 small men / stars
Ingredients
125g vegan butter (softened)
1/2 cup brown sugar
2/3 cup golden syrup
2 1/2 cups plain flour
2 teaspoons ground ginger
1 teaspoon bicarb soda
What do I do now?
Preheat the oven to 160 degrees celsius.
Using an electric mixer cream the vegan butter and sugar for about 6 minutes until light and fluffy.
Add the rest of the ingredients and beat to combine – you will have a smooth dough.
Roll the dough (5mm thick) between 2 sheets of baking paper and into the fridge for 30 minutes.
Cut out your desired shapes and bake for about 8 minutes until golden. Allow to cool completely.

These will keep for about 3 days in an airtight container.
