Vegan Blueberry Muffins just came out of the oven. These are a healthy and delicious breakfast or snack muffin. You can leave the sugar out if you prefer and add a mashed banana when you fold in the blueberries. Ready in 30 minutes from beginning to end you could also freeze these to be enjoyed later.

Blueberry Muffins
Makes 12 muffins
Ingredients
1 cup oats (processed to flour like consistency)
1/2 cup coconut flour
1 cup self raising flour
1/3 cup brown sugar
1/3 cup maple syrup
1 Tablespoon coconut oil
1 cup plant milk (rice, soy, almond)
1 cup frozen blueberries
What do I do now?
Preheat the oven to 200 degrees celsius and prepare your patty pans.
Place the oats in a food processor and process to a flour-like consistency.
Combine the dry ingredients (flours and sugar). Set aside.
Melt the coconut oil and maple syrup on low heat and combine with the dry ingredients. Next add the milk and stir to combine. Finally fold in the blueberries.
Place even heaped tablespoons in the patty pans and bake for about 20 minutes until golden.
Cool and enjoy!
