Chocolate and Chia Energy Balls

Chocolate and Chia Energy Balls – a delicious little energy bites that give you a chocolate hit without the sugar. The kids love these and eat them after school and after sport etc (they have nuts in them so not OK for school lunch box). They are really rich so you only need to eat 1 or 2 and it’s enough. Yum!

Chocolate & Chia Energy Balls

Makes about 12 balls give or take

Chocolate and Chia Energy Balls

Ingredients

3/4 cup medjool dates

3/4 cup almonds

3/4 cup walnuts or pecans

3 tablespoons chia seeds

1 tablespoon coconut oil

1 tablespoon almond butter

2 tablespoons raw cacao powder

What do I do now?

Place the nuts and chia seeds in the food processor. Blend until they form a crumbled mix resembling flour.

Add everything else and blend until a sticky dough forms.

Use your hands to roll into little balls, then place into the freezer for about an hour.

Transfer to the fridge in an airtight container.

What else should I know?

I rolled half of these in raw cacao powder and the rest in shredded coconut.

Took a couple to work during the week and ate them as an afternoon snack.
