Quinoa! This has always been a bit of mystery to me – what do you put with this so it can be eaten? Apart from putting it in porridge I have been at a bit of a dead end with quinoa. I like to eat it with the freshest vegetables I can find – mix it all up and season with herbs and spices and add some avocado at the end – it’s really tasty!

Quinoa Deliciousness
Makes 8 side serves
Ingredients
1 cup uncooked tricolour quinoa.
2 cups water
1 small chilli finely sliced
1 Tablespoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1 corn cobs with kernels removed (you can use tinned corn but fresh is so much nicer)
2 small tomatoes finely diced
1 green capsicum finely diced
1 cucumber finely diced
1 carrot peeled and finely diced
1 avocado diced
salt and pepper to taste
What do I do now?
Cook the quinoa with the water – through the absorption method
When the quinoa is cooked, turn off the heat and add all the herbs and spices.
Season with salt and pepper and mix well while still hot.
Add the rest of the vegetables and avocado and mix well.
Serve and enjoy!
Anything else I should know?
I have tried many ways to make quinoa interesting. This is one of the only 2 ways that I eat it (the other is with oats in a creamy coconut porridge).
You can make this in advance and take to work for lunch – it will retain it’s flavour and texture.
