I love all kinds of bread and this is a super easy Vegan Soda Bread that you can make in about 30 minutes (without waiting for yeast to work its magic). This has been recipe tested and given the tick of approval. To add some variety you could add olives, garlic, herbs or just about anything else you can think of to this bread. I like it plain with lots of vegan butter. You could use a square loaf tin if you would like a loaf of bread shape or just roll into a ball and bake – use your imagination!

Vegan Soda Bread
Serves 8
Ingredients
1 cup almond milk (or soy, rice milk)
1 teaspoon white vinegar
2 cups self raising unbleached flour
1 teaspoon baking soda
1 teaspoon salt
1/4 cup melted vegan dairy spread
What do I do now?
Preheat the oven to 200 degrees celsius. Lightly grease a round cake pan.
In a small bowl combine the milk and vinegar (stand for 5 minutes – you have created “buttermilk” with the acidic vinegar)
In a large bowl combine the dry ingredients – add the milk and vinegar mix and the non dairy spread. Mix to a sticky dough (if it’s really wet just add some more flour) – knead for a few minutes and then place into your cake tin and bake for 40 minutes. Cool slightly before serving – it should look golden and make a hollow sound when you tap the bottom of the bread.
Anything else I should know?
You could add some sultanas, nuts or vegan cheese, olives or anything else you like to this for a savoury twist.
It makes 1 round loaf and should be eaten immediately!
