Chocolate Chia Cookies (from Deliciously Ella)

Deliciously Ella's chocolate chia cookies

These Chocolate Chia Cookies (inspired by Deliciously Ella) are the best vegan snack. I will often make these on Sunday night and take a batch of them to work with me – they last all week in a sealed container on my desk and I eat them whenever I feel like a chocolate hit.

The recipe inspiration is from Deliciously Ella, see here for her site – she is incredible!

Chocolate Chia Cookies (inspiration from Deliciously Ella)

Makes about 16 cookies depending on how large or small you make them!

Deliciously Ella's Chocolate Chia Cookies

Ingredients

1 cup of almonds

1 cup of hazelnuts or pecans

1 cup of flour (whatever flour you want to use – plain, self-raising, quinoa, buckwheat)

100ml or 1/2 cup maple syrup

75ml or 1/4 cup water

2 Tablespoons Coconut Oil

5 Medjool dates (take the pits out)

3 Tablespoons of Raw Cacao Powder

3 Tablespoons Chia Seeds

 

What do I do now?

Preheat the oven to 200 degrees C or 180 degrees C (fan forced).

Put the nuts into a food processor and blend almost until a flour forms. Then just add everything else into the food processor and blend until a sticky “dough” forms. Scoop out about a tablespoon of dough and roll it into a ball. Flatten it using a spatula (after many attempts at having these just stick to my hands and the spatula and look nothing like a nice cookie, I realised if you spray the spatula with a little baking spray they won’t stick and you get nice round cookies!).

These don’t rise or spread out so you don’t need too much space between them on the tray. Lay them all out on the tray and bake for about 15 minutes. Leave them to cool and then enjoy!

Anything else I should know?

You could add these to ice cream or spread some almond butter on them if you want a more substantial snack or an easy dessert creation. They are really good with an apple as a morning or afternoon snack. Great with a short black coffee or herbal tea – whatever you like! It’s all good.
