Vegan Bounty Bites

Vegan Bounty Bites

These vegan bounty bites are inspired by Arman from the Big Man’s World – see his instagram here

For the best vegan sweet treats, his page is incredible! I have always loved the bounty bar and these are honestly just as good if not better.

Very quick and very easy to make!

Vegan Bounty Bites

Makes 12 bites

Ingredients

1 cup shredded coconut

1 cup desiccated coconut

1/2 cup coconut oil (melted)

1/4 cup maple syrup

1 cup vegan dark chocolate chips (melted)

1 tablespoon sunflower oil

What do I do now?

  • Line a rectangular or square pan with baking paper and set aside.
  • In a large mixing bowl, add coconut, coconut oil and maple syrup and mix very well. Pour mixture into the lined pan. Lightly wet your hands and press firmly in place. Place in the fridge or freezer to firm up.
  • Once firm, remove and cut into bars. Place in the refrigerator.
  • Melt your chocolate chips with the oil in a double boiler (place bowl on top of pot of boiling water and stir to melt – don’t let the bowl touch the water). Once melted – individually dip each coconut bar in the melted chocolate until coated evenly. Repeat until all the bars are evenly coated. Once I coat them in chocolate I place them on a wire rack with baking paper underneath to drain off any excess chocolate.
  • Refrigerate until chocolate firms up and enjoy!

Anything else I should know?

These can be kept in the freezer until you are ready to eat them – just let them warm a little at room temperature before eating! Delicious!
