Delicious summer berries all together on a plate! I saw this in a magazine and could not resist.
Start with the cherries – buy them fresh and pit them and cut them in half.
Then make a lime sugar syrup by combining 1/4 cup lime juice, 1/4 cup caster sugar, 1/4 cup water and a teaspoon of vanilla. Throw in a couple of mint leaves and bring the whole lot to the boil in a small pot. Let it boil and thicken a little (about 5 minutes). Take out the mint leaves and then add the fresh cherries to the syrup and set aside to cool.
Then, all you have to do is cut some watermelon about 1cm thick and punch out some shapes – you can use anything – a star, xmas tree, circle. I used “X” for Xmas! Add whatever other berries you like – I used blackberries and raspberries. Once the cherry mix has cooled pour it over the rest of the fruit, add a couple of fresh mint leaves and enjoy!
