I had a couple of attempts at these – the first ones you could not taste the lime in them at all. These are very simple to make and can be stored frozen until you are ready to eat them.

Little Key Lime Pies
Makes 12 little pies
Ingredients
Base
1 cup medjool dates (pitted and chopped)
1/2 cup almonds
1/2 cup pecans
1/4 cup shredded coconut
1 Tablespoon coconut oil
Filling
2 cups raw cashews (soaked for at least 3 hours prior to use)
1 cup lime juice
1/2 cup maple syrup
1/3 cup coconut oil
dash of vanilla essence
What do I do now?
Prepare 12 patty pans and spray with a little canola spray or similar.
To make the base put everything into a food processor, starting with the nuts and blend until you get a crumbly mixture. Press a tablespoon of this mixture into the patty pans and press down with the back of a spoon or your fingers. Put in the fridge while you make the filling.
For the filling combine everything into a food processor and process until nice and smooth. Taste the mixture and add some lime zest for extra flavour. Put about a tablespoon of this mix on top of your base and freeze.
Add some fresh lime as decoration and grate some more zest over the top before serving if you like extra lime flavour.
Anything else I should know?
These can stay in the freezer until you are ready to eat them – just take them out for about 15 minutes to warm up a little before eating.
This could also make one single large pie if preferred.
