These Peanut Butter Cookies are so incredibly delicious – crunchy on the outside and soft inside. So tasty. They have a lovely light peanut butter taste. You could add chopped peanuts to the mix or chocolate chips for some variation. I like them just like this. Those who know me very well, know that I have an unnatural love of all biscuits. This is my weakness. Because biscuits are simply the best.

Peanut Butter Biscuits
Makes about 20 biscuits give or take (depends how big you make them)
Ingredients
1 & 3/4 cup unbleached all-purpose flour (sifted)
3/4 teaspoon baking powder
pinch of salt
1 cup brown sugar
3/4 cup peanut butter (smooth or crunchy)
1/2 cup non dairy butter (I used coconut spread)
1 teaspoon vanilla essence
1/2 cup ground peanuts (optional)
1/2 cup non dairy choc chips (optional)
What do I do now?
Preheat the oven to 190 degrees celcius. Line baking tray with baking paper.
In a small bowl combine the flour, baking powder and salt. Set aside. In a large bowl combine everything else and mix with a hand mixer until creamy and blended. Fold into the flour mix. Add a little water if it looks too thick. It should resemble cookie dough.
Roll into balls and flatten with a fork or your fingers. Place them about 4cm apart. Bake for about 10 minutes. Don’t over bake. Remove from the oven to cool completely.

These can be kept in an airtight container for about 5 days. Trust me, they will not last this long!
