Chickpea Energy Bites

These Chickpea Energy bites come to you from the House of Wallberg. I saw this on their Instagram feed and thought – that I have to try! This is a piece of vegan sorcery if ever there was. I could not believe how tasty these are and guess what? Gluten free, nut free, dairy free, sugar free and vegan. Insane.

Makes about 16 balls

Chickpea Energy Bites

Ingredients

1 cup oats

8-10 medjool dates (pitted)

1 can chickpeas (drained) or soak 1 cup of your own overnight

1 teaspoon of almond milk

For the chocolate top

1/3 cup melted coconut oil

3 tablespoons cacao powder

3 tablespoons maple syrup

1 teaspoon of hot water (if needed)

What should I do now?

Blend the oats, dates and chickpeas in a food processor until smooth (add a teaspoon of almond milk / water if needed).

Make the mix into balls and into the freezer while you make the chocolate dip.

For the chocolate dip, melt the coconut oil and whisk in the cacao powder and maple syrup. Mine was quite thick so I added a teaspoon of boiling water and whisked again – voila! Silky πŸ™‚

Dip the balls into the chocolate and eat!

What else do I need to know?

You can keep these in an air tight container in the fridge for about a week (if they last that long).

I placed a pomegranate seed on top because I had some left over from some other cooking πŸ™‚

You could sprinkle with coconut or just leave as is. Yum.
