This is Nana Mitchell’s Date and Walnut Loaf! I was searching through my cookbooks and came across one that was put together by all the parents and carers involved in my son’s day care centre (Ada Mary) about 12 years ago! Inside the book I found this gem of a recipe from Nana Mitchell. Thank you to Louise Mitchell for letting me post the recipe, which is vegan and delicious!

Nana Mitchell’s Date & Walnut Loaf
Serves 10
Ingredients
1 cup medjool dates – chopped and pitted
1/2 cup walnuts – chopped
1/4 cup sugar
pinch of salt
1 Tablespoon vegan butter
1 teaspoon bicarb soda
1 cup boiling water
1 & 1/2 cups self raising flour
What do I do now?
Preheat the oven to 180 degrees C / 350 degrees F.
Prepare a loaf tin (grease and line the base with baking paper).
Place everything except the flour into a saucepan, cook on low heat, stirring until the butter is dissolved (the mixture will foam up). Set aside to cool.
Add the self raising flour and fold to combine.
Put the mix into your prepared tin and bake for 35 – 40 minutes.

Anything else I should know?
This can be frozen to be eaten later – I cut my loaf into slices and froze portions to take to work for morning tea. It’s so delicious. Thanks to Nana Mitchell and Louise Mitchell for allowing me to share the recipe!
