
A little muesli in a bar – great for breakfast or when you are in a rush and don’t have time to eat. These would also be excellent after a workout of any description. I had them for morning tea today and they were really good – crunchy and chewy at the same time. Can be made in advance and kept in an airtight container for about 3-4 days.

Maryke’s Muesli Bars
Makes about 18 small bars
Ingredients
1 over ripe banana
1/2 cup puffed brown rice
1/2 cup oats
1/2 cup sultanas
1/2 cup craisins
1/2 cup flaxseeds
1/2 cup pumpkin seeds
1/4 cup almonds
1/4 cup sunflower seeds
4 medjool dates
2 tablespoons almond butter
1 tablespoon maple syrup
1 tablespoon water
1 teaspoon cinnamon (ground)
What do I do now?
Preheat oven to 190 degrees celcius, place all of the dry ingredients in a mixing bowl and stir to combine.
Place the almond butter, dates, bananas, maple syrup and water in a food processor and blend until smooth.
Pour this mix into the dry bowl and stir until fully combined. Bake for 20 minutes in total – after about 10 minutes take them out and slice into bars. Put back into the oven and bake for a further 10 minutes.
These MUST cool completely in order to set fully.

These are great as a breakfast on the go – it’s like a little bowl of muesli in a bar.
