Sweet Potato with Chickpeas
Serves 6 as a side dish
Ingredients
1 large sweet potato
1 x 400g can of chickpeas (preferably organic) or you can soak your own overnight
1 tablespoon of olive oil
1 tablespoon maple syrup
salt and pepper to taste
What do I do now?
Peel your sweet potato and preheat the oven to 180 degrees celsius.
Cut into long strips (like large fries / hot chips)
Place on a baking tray and drizzle with olive oil, maple syrup, salt and pepper.
Roast for 20 minutes.
Add the chickpeas, mix and roast for further 20 minutes.
