Blueberry Dessert (no bake)

Inspired by Deliciously Ella this one has been on my radar to make for a while. What better opportunity than for my family while on holidays in Hawaii. Ella calls this a Blueberry Cheesecake but she hasn’t met Jack and according to him “technically this is not a cheesecake as there is no CHEESE in it.” So I am calling it a blueberry dessert because that is what it is. A little bit of preparation is required in advance (freezing bananas and soaking cashews) but it’s not hard. The funny thing was that I had to make this in a pot as there was no other suitable cake tin or anything that would work. I was holding my breath when I took it out as I was sure it was going to collapse in a big heap. Lucky for us, it didn’t! Then I made one at home – the one in the featured image – was a lot easier in my own kitchen with a spring form tin and baking paper.

Blueberry Dessert (no bake)

Serves 10 people
Requires advance preparation (freeze bananas and blueberries and soak cashews).
You also need to reserve a 1/4 of the middle layer to mix into the final layer.

Ingredients

Base Layer

1 cup almonds

2 cups medjool dates

Middle Layer

2 ripe frozen bananas

2 cups raw cashews (soaked)

1/2 cup maple syrup

1/4 cup water

1 teaspoon cinnamon

Top Layer

1 ripe frozen banana

1 cup fresh frozen blueberries

1 cup strawberries

1 tablespoon maple syrup

What do I do now?

There are 3 layers to this dessert. Patience!

Base Layer – put the almonds in a food processor and blend until they are crushed. Add the dates and blend until a sticky mix forms. Press this into the base of your tin (best to use a springform tin and spray with some olive oil spray or similar before assembling). Put in the freezer.

Middle Layer – Put everything in the blender and blend until smooth and creamy. Leave 1/4 of the mix behind and put the rest on top of the base layer and back into the freezer for about 30 minutes before making the top layer.

Top Layer – put the rest of the ingredients in with the mix that you have left over from the middle layer. Blend until smooth and creamy. Pour on top of the final layer and back into the freezer.

Top with fresh berries before serving.

What else do I need to know?

Before making this you need to soak the cashews and freeze the bananas and blueberries. You need a bit of time to put this together. I find that making it during the day when you are home is the way to go and then it can just stay in the freezer whenever you are ready to eat it. Incredibly delicious.
