These apple cinnamon energy bites are a great snack for breakfast or after a work out. Inspired by Brendan Brazier and his wonderful book “Thrive” for vegan athletes. I used this book when I was running marathons back in 2014. Brendan is an incredible athlete and vegan advocate.
These can be made without the almond for a nut free version which would be good for kids lunch boxes also. Best to freeze these initially and then warm up a little before eating.

Apple Cinnamon Energy Bites
Makes 16 energy balls
Ingredients
1 green apple – cored, peeled and diced or grated
8 medjool dates
1/2 cup raw almonds
1/4 cup flaxseed
1 teaspoon cinnamon
1/2 teaspoon nutmeg
What do I do now?
Place everything in a food processor, roll into balls and place in the freezer until you are ready to eat them!
Anything else I need to know?
These can be frozen to be eaten later. They won’t freeze through. Delicious!
