This vegan Banana Loaf is a winner. The secret is to have very very ripe bananas as this makes the bread naturally sweet and dense, which is what you want in a banana loaf. Makes it easy to toast and can be frozen to eat later! I slice mine and freeze them to take to work for morning tea. Nice lunch box treat also.

Banana Loaf
Makes one loaf - about 8 slices give or take
Ingredients
Wet:
4 very ripe mashed bananas
1/3 cup almond milk
2 Tablespoons flax meal
2 Tablespoons sunflower oil
2 Tablespoons maple syrup
1 teaspoon vanilla essence
Dry:
1/3 cup brown sugar
1&1/2 cups plain flour
1 teaspoon bicarbonate Soda
What do I do now?
Preheat the oven to 180 degrees C or 350 degrees F – prepare your loaf tin.
Mash the banana and mix with the wet ingredients. Add your dry ingredients and mix until just combined (don’t over mix this).
Bake for 35-40 minutes.
Cool, slice and enjoy!

Could it be any easier? One bowl, simple to make and always good. Plus it smells amazing while it is baking. Can be toasted or frozen. Pretty versatile!
