This Spaghetti Primavera is a quick and simple dish that takes about 30 minutes in total from preparation to eating! Use whatever vegetables are in season or that you like to eat. I used all the vegetable toppings I had left over from a pizza making night. If you would like a gluten free version just use a gluten free pasta instead.

Spaghetti Primavera
Serves 4
Ingredients
1 x red onion
2 x small zucchini
1 x red capsicum
1 x small head of broccoli
4 x large flat mushrooms
1 x clove garlic
handful of pine nuts
spaghetti for 4 people
fresh basil to serve
olive oil to serve
What do I do now?
Cook spaghetti as per the packet instructions.
Dice all of your vegetables into your desired size.
Fry everything together (vegetables and pine nuts) on low heat in some olive oil until soft – usually about 15 – 20 minutes.
Once your spaghetti is ready – add to the plate and top with your vegetables, a drizzle of olive oil and some fresh basil.

This is a very quick and simple dish – you can use whatever vegetables you like to eat.
Great one for using whatever vegetables you have left in the fridge.
Also good the next day after cooking.
