Vegan Waffles

I got a waffle maker for Christmas and have been experimenting with a vegan waffle recipe – similar to the mix I use for my banana oat pancakes. Super simple and delicious! Top with whatever you like – lots of summer fruit (as I did) or maple syrup. You could just add some vegan butter, cinnamon and sugar. It’s all good. This would also be a healthy dessert with some vegan ice-cream or sorbet and berries. You can also add berries to the batter if you like.

Vegan Waffles

Makes 2 waffles

Vegan Waffles

Ingredients

2/3 cup oats

1 large banana

2/3 cup almond milk

1/2 cup plain flour

1 egg replacer

1 teaspoon vanilla essence

 

What do I do now?

Throw everything into a nutri ninja or blender and blend until smooth.

Add to your waffle maker.

Cook, top and enjoy.

Anything else I should know?

Waffles for breakfast or dessert – these are healthy and can be made gluten free by using GF flour. You can skip the egg replacer – it will still work but won’t “rise” as much.
