Orange Poppyseed Cake

Orange Poppyseed Cake

Vegan Orange and Poppyseed cake with Cream Cheese Frosting. Vegan and so good – I made two loaves and they were both eaten in record time. It’s full of flavour and has a great orange taste. The cream cheese frosting makes this! Toffuti is simply the best.

Orange Poppyseed Cake

Serves 10

Vegan Orange Poppyseed Cake

Ingredients

Cake

2 cups self raising flour

1/4 cup vegan spread

1/2 cup caster sugar

1 cup soy milk

1/4 cup orange juice

1 teaspoon vanilla essence

1/4 cup poppy seeds

1 teaspoon finely grated orange rind / zest

Cream Cheese Frosting

3 tablespoons vegan cream cheese

1 tablespoon vegan butter

1 tablespoon orange juice

1/2 cup icing sugar

What should I do now?

Combine the melted vegan spread and sugar in a bowl and mix. Add the rest of the ingredients (the poppy seeds and orange zest go in last) and combine – don’t over mix this! Bake for 30-40 minutes on 180 degrees celsius.

Allow to cool completely before frosting.

Frosting is simple – just mix everything together.

Top the cake with the frosting and enjoy.

Anything else I should know?

This also freezes well – it’s nut free so good for the school lunch box.

    That looks like a really lovely cake! If I wanted to sub self-raising flour with all-purpose, do you know how much of baking powder/baking soda I need to add? Thanks!

      I would put in a teaspoon of baking powder – should work out just the same! Enjoy 🙂

    Hi, in the frosting, can we substitute vegan cream cheese with something else? Having trouble finding it

      you could use 1 TB vegan butter, 1 teaspoon soy milk and 1/2 cup icing sugar (powdered sugar)
